This idea was completely made up by yours truly. A couple days ago I heard about someone grilling avocados so my mind went straight to smoke. I thought about how good the creamy avocado flavor would taste with some hickory smoke. Danny and I went to the store to get ingredients. As we were walking out there was a huge bin of watermelons. It occurred to me that instead of the tomatoes used in the guacamole we could use watermelon. This dish was really flavorful. We ended up pairing it with some grilled pork tacos. The only thing I might change and Danny does not agree with this is that I would use one fresh avocado not smoked to keep some of the original flavors. He thought it was perfect this way. Try both!

Smoked Guacamole

  • 3 avocados
  • 1 slice watermelon
  • 1 lime
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 teaspoon red pepper flake
  • salt and pepper to taste
  • hickory wood chips

Cut the avocados in half and remove the skin and pit.

 

 

Cut the watermelon slices. Here I show 3 slices because I wasn't sure how much would be enough. In the recipe it calls for 1 slice. This was more than enough. You can always snack on the leftovers ;)

 

 

Heat the coals on the grill and place the watermelons directly over the heat for 2 minutes a side. This will allow the sugar to come to the surface and make them sweeter.

 

 

Take watermelons off and put hickory chips on the coals. Place the avocados indirectly over the heat so they dont cook but just absorb the flavor of the smoke.

 

 

Close the grill top and let smoke for 5 - 10 minutes or until the smoke has stopped coming out of the grill.

 

 

Once the avocados are ready mash them down to prepare for the guacamole. Cut the watermelon into small squares like you would with a tomato. Squeeze fresh lime juice onto the avocados.

 

 

Sprinkle in the cilantro, salt, pepper, and red pepper flakes. This can all be done to taste the recipe is just a guide for you.

 

 

Mix together all the ingredients and enjoy on your favorite chip or taco!
